Over 60% of sweet potatoes are grown here in North Carolina. Therefore, they are found often on my dinner table!
This crockpot sweet potatoes method is the easiest way to bake them. They are perfect for busy days, especially when the oven is full of other dishes. Depending on their size, you can fit quite a few potatoes in there, which makes them perfect for dinner parties too. Top them with butter, cinnamon, brown sugar, maple syrup, or marshmallow fluff, and you've got a cozy, tasty side that pairs well with just about anything. I hope you love them as much as we do. Enjoy! Xoxo -Katie.

Can you stack sweetpotatoes in the crockpot?
You can stack up to two layers of sweet potatoes in your crockpot as long as you can securely cover it with the lid.

Cooking Tips
- Skip the foil. Unlike the oven method, the moisture is already sealed in and they cook evenly in the slow cooker without it.
- You do not need to pierce your sweet potatoes before cooking them in the crockpot. Sweet potatoes can explode in the oven because of the dry heat that builds up pressure under the skin. Therefore, it is recommended to pierce the skin when roasting them in the oven. However, slow cooker uses moist heat, so there is no pressure build up or risk of exploding potatoes.
