Slow cooker cheesy potatoes are a no-fail side dish everyone loves. This recipe combines hash browns, cheddar cheese, French onion dip, and cream of chicken soup into a super creamy, ultra-cheesy, hash brown casserole that's completely dump-and-go. It's perfect for holidays, potlucks, Sunday dinners, or busy weeknights.

Hash browns loaded with melted cheddar cheese in the slow cooker with a checkered napkin and wooden spoon to the side.

"These are so good! The perfect comfort food side dish. The addition of the French onion dip made it really good. Would've never thought to add that myself."

    - ★★★★★Jen

If you ever had Cracker Barrel's Hash Brown Casserole, these cheesy potatoes are almost a copycat version.

This recipe is a little different because I swap out sour cream with French onion dip. It adds extra richness and a subtle savory onion flavor. Every bite is creamy, cheesy, and down right delicious. When I want a change from mashed potatoes, I love serving these alongside steaks or pork chops. They also are a delicious side dish for brunch. I hope you love them as much as we do. Enjoy! Xoxo -Katie.

slow cooker cheesy potatoes ingredients- hash browns, cheddar cheese, French onion dip, cream of chicken soup, garlic powder, onion powder

    Ingredient notes and substitutions

You will need the following ingredients to make slow cooker cheesy potatoes.

    • shredded hash browns- I find the texture is more creamy with the shredded hash browns. You can use fresh or frozen shredded hash browns. You can substitute with cubed hash browns, but they won't be as creamy.
    • French onion dip- You can substitute with sour cream.
    • Cheddar cheese- You can substitute with Monterey Jack cheese. For a spicy kick, you can substitute with Pepper Jack cheese.
    • butter
    • cream of chicken soup- You can substitute with cream of mushroom soup or cream of celery soup.
    • onion powder- You can substitute with diced onion or green onion, but keep in mind they will add a noticeable crunch to the texture.
    • garlic powder- You can substitute with 1 crushed garlic clove.

What a great way to cook potatoes. I have never cooked potatoes in the slow cooker, and it sounds so convenient. Such a yummy comfort food recipe.
