    Mashed potatoes are a delicious side for any comfort meal.

    What makes these mashed potatoes special is that they combine butter, grated parmesan, heavy cream, sour cream, and green onions.

    Then they are baked in the oven to form a buttery, golden brown parmesan crust.

    The texture and flavor combination is incredible.

    The result is the BEST MASHED POTATOES ever!!!

    Ingredients

    You will need the following ingredients for baked mashed potatoes:

    • shredded parmesan- I like the shredded parmesan mixed in the mashed potatoes because of the texture it creates when it melts into the potatoes.
    • grated parmesan- The grated parmesan makes the perfect texture for the crust topping.
    • Russet potatoes- I use Russet potatoes in this recipe for the high starch content. They whip up fluffy and light. A great substitute is the Yukon Gold potato.
    • sour cream
    • butter
    • heavy cream-You can substitute with whole milk.
    • green onions- The green onions add a nice flavor without overpowering the potatoes. You can substitute with chives or omit.

    Note

    Note: I like using both the shredded parmesan and grated parmesan in this recipe. Shredded parmesan contains moisture and the cheesy strands melts slower creating a rich, fluffy, binding texture. The grated parmesan is dry and melts fast creating a crispy beautiful crust. For optimal results, use both cheeses. If you only want to use one type of parmesan, I would use the grated because the crust really makes this dish special.

    Steps to make baked mashed potatoes

    Follow these simple steps to make baked mashed potatoes:

    1. Peel potatoes. Cut into similar sizes. Add potatoes to boiling water and cook until fork tender. ( About 15 minutes.)
    2. Remove from heat and strain water. Add in butter and mash potatoes.
    3. Mix in heavy cream, sour cream, shredded parmesan, and green onions (Reserving 2 tablespoons of green onions to the side). Salt and pepper to taste.
    4. Pour mashed potatoes into a greased 9 x 13 baking dish.
    5. Slice remaining butter and add butter slices on top of the mashed potatoes.
    6. Layer grated parmesan over butter and potatoes. Bake at 350 degrees uncovered for 20 minutes.
    7. Turn on broiler setting and broil 2 to 4 minutes. Watch the entire time looking for a golden brown.
    8. Remove from oven and add additional green onions. Rest for 5 minutes before serving.

    Can you make ahead mashed potatoes?

    You can make ahead the mashed potatoes.

    Follow the instructions to make the mashed potatoes. Then cover and refrigerate.

    When ready to serve, cover with butter and parmesan cheese topping.

    Then bake uncovered 30 to 35 minutes.

    Broil the topping the last 2 to minutes.

    I did make a few changes to the recipe.

    It has now become one of my favorite mashed potato recipe and I absolutely love to serve it when I have guests over.

    • 3 pounds Russet potatoes 5-6 large Russet potatoes
    • 1¼ cup butter 1½ sticks of butter
    • 1 cup shredded parmesan
    • 1 cup heavy cream
    • ¼ cup sour cream
    • 5 green onions sliced thinly

    Crust Topping

    • ¼ cup butter ½ stick of butter
    • 1 cup grated parmesan
