Homestyle slow cooker beef and noodles is an easy dump-and-go recipe that delivers big comfort-food flavor. Beef simmers low and slow in a rich brown gravy until it's fall-apart tender. It is served over egg noodles that soak up the gravy for a delicious, hearty meal that's perfect for family dinners around the table.

"This dish was pure comfort food! The beef was melt-in-your-mouth tender, and the sauce was so rich and flavorful. Perfect for a cozy dinner!"

This is one of those meals, where "less is more." The ingredients are simple, the effort is minimal, and the result is a warm, rich, saucy, and cozy meal that tastes like it took far more work than it actually did.
And it is exactly the kind of meal my husband likes to come home to. He can't get enough of the rich, beefy gravy and the egg noodles that soak up all that delicious flavor. In fact, he practically enhales the dish once the moment it's set in front of him. If there are any leftovers, the noodles tend to soak up even more of the gravy overnight and become a little softer the next day. Oddly enough, my husband looks forward to the leftovers even more. Soggy or not, I always make sure I've made enough to set aside for him the next day.
Many people serve this with mashed potatoes and a dinner roll. While it is absolutely delicious that way, I prefer to have a little less carb overload and usually add a vegetable such as buttered corn, carrots, or green beans. That said, this is filling enough to eat all on its own. Enjoy! Xoxo ~Katie.

Ingredient notes and substitutions
You will need the following simple ingredients to make slow cooker beef and noodles.
- Chuck roast- Chuck roast is the best cut of beef because the marbling breaks down during cooking, creating tender, flavorful shredded beef. If needed, you can substitute with top round roast or rump roast. Beef stew meat can also be used, but the texture may not be quite as tender.
- Egg noodles- Both dried wide egg noodle and frozen egg noodles are delicous in this recipe and hold up well under the brown gravy. Which one you choose comes down to the texture you prefer. Dried egg noodles have a lighter texture and and tend to soften a bit more for leftovers. Frozen egg noodles take a little longer to cook, but they are thicker and have a dumpling-like texture. They also absorb more gravy and become softer and plumper the next day.
- Condensed French onion soup can - Condensed French onion soup is more flavorful than the dry onion soup mix. However, you can substitute with dry onion soup mix and water.
- Condensed beef consommé can- Beef consommé creates a richer and deeper flavor than regular broth. If needed, you can substitute with beef broth, but the gravy will be slightly less robust.
- Brown gravy mix

Can you cook the egg noodles in the slow cooker?
Honestly, some egg noodles cook great in the slow cooker and some egg noodles turn out gummy. To guarantee the right texture and flavor, I recommend cooking them separately and adding the egg noodles back in.
However, if you want to cook the egg noodles in the slow cooker, add the egg noodles to the slow cooker after removing the chuck roast, cover, and cook on high for 30 minutes. Shred the chuck roast and add in the meat after the noodles are cooked.

What if you want a thicker gravy?
The gravy in this recipe is on the thinner side. The roast meat and the noodles absorb up most of the gravy creating juicy beef with every bite.
However, if you prefer a thicker gravy, once the roast is cooked, remove 1 cup of beef broth from the slow cooker. Mix in 2 tablespoons of cornstarch with ½ cup of beef broth. Pour mixture back into the broth and stir.
Another option is to add ½ cup of heavy cream to the beef broth.
Can I freeze slow cooker beef and noodles?
Freeze only the beef and gravy mixture. The noodles will become mushy after freezing and thawing.
What to serve with slow cooker beef and noodles?
Slow cooker beef and noodles pair well with green beans, buttered corn, broccoli, mashed potatoes, or a side salad.

Can I use stew meat
Katie Crenshaw says
Hi Sandy. Yes, you can use stew meat. Stew meat is made from the scraps of chuck roast. It tends to be more lean. For this reason, the meat may not be quite as tender. However, overall, it will not make a huge difference.
