    Ingredient notes and substitutions

You will need the following simple ingredients to make graham cracker toffee.

    • graham cracker sheets- I recommend honey graham crackers. However, you can substitute with chocolate graham crackers or saltine crackers.
    • butter-Salted butter works best for this recipe. Use real butter and do not substitute for margarine.
    • granulated sugar- You can substitute with brown sugar.
    • pecans-Pecans are traditional in this recipe, but you can swap out walnuts, almonds, or hazelnuts.
    • vanilla extract

steps to make graham cracker toffee

    Steps

Follow these simple steps to make easy graham cracker toffee bars.

    1. Carefully break graham crackers at the seam.
    2. Preheat the oven to 375 degrees. Layer the graham crackers on a large jelly roll pan or cookie sheet.
    3. In a medium saucepan, melt better and sugar on medium heat. Bring to a boil and boil 2 minutes.
    4. Remove butter mixture from heat and add vanilla extract.
    5. Pour toffee mixture evenly over the graham crackers. Add chopped pecans over the buttery toffee.
    6. Bake 7 to 9 minutes. IMMEDIATELY remove from heat and place on wax paper, parchment paper, or cooling rack. If you leave them on the pan too long they will stick to the baking pan. Allow to cool. Store in an airtight container until ready to serve.

    Graham cracker tip

Use a knife to cut the graham crackers at the seams. This will prevent breakages.I find that when you snap the graham crackers by hand, they break unevenly.

    Pecan tips

I use chopped pecans for this recipe because they are cheaper than the halves. I also chop the chopped pecans into smaller pieces. The smaller the pecan pieces are, the easier they will stick to the toffee and evenly distribute.

    Tips for making crunchy toffee

Follow these tips for making perfect crunchy toffee.

    • Make sure the sugar is fully melted before allowing the mixture to reach a boil. Otherwise it will become grainy.
    • Stir the toffee gently and avoid ingredients splashing on the sides of the sauce pan when cooking. When the sugar touches the sides of the pan it looses moisture and can become grainy. I like to use a rubber spatula to stir the toffee because it will easily remove the sugar off the sides of the pan, back into the mixture.
    • Avoid over-stirring. Mix butter and sugar until the sugar is dissolved. Afterwards, mix on occasion only to prevent the toffee from burning. Over-mixing introduces too much air creating chewy toffee. For this recipe, we want the toffee to be hard and crispy.
    • Try to avoid making the toffee bars on a high humid day. The moisture in the air can cause the toffee to not completely harden and become chewy in texture.

    About the recipe

This recipe is from my husband's Aunt Debbie Moore a.k.a "Queen of the Sweets." She never visits empty handed without some kind of incredible sweet dessert. She is an incredible baker and sweet treat maker. Her personality and bright smile are as sweet as the treats she brings. She makes these graham cracker toffee crisps every year for our Christmas celebrations. They disappear really fast! She also makes the delicious candy bar cream cheese fruit dip recipe! You should try that one too!
