Calling out all lemon fans! This will be your few favorite dessert!

This frozen lemonade pie has a rich, creamy, sweet, and tangy lemon filling in a buttery gingersnap crust. It is the perfect no-bake dessert for a hot summer day!

Frozen lemonade pie is also known as lemon icebox pie. Traditional vintage recipes use cool whip and a graham cracker crust.

My recipe creates a homemade ginger snap crust that pairs perfectly with the tangy lemon filling. I omit the cool whip and use homemade whipped cream for a creamier density. I also add extra lemon juice for an extra pucker punch of lemon flavor.

This combination creates the best frozen lemonade pie! You will love every bite! Enjoy! Xoxo ~Katie.

frozen lemonade pie ingredients-gingersnaps, butter, cream cheese, sweetened condensed milk, lemon, heavy whipping cream, frozen lemonade concentrate

    Ingredient notes and substitutions

You will need the following ingredients to make frozen lemonade pie.

    • ginger snaps- Ginger snaps are used to make the crust. If you do not like ginger snap cookies, you can substitute with 2 cups graham crackers and ⅓ cup of brown sugar. If you do not want to make a crust, you can purchase a large sized premade graham cracker pie crust.
    • butter-You can use unsalted butter or salted butter.
    • frozen lemon concentrate-For a variation of this pie, you can substitute frozen lemon concentrate with frozen lime concentrate or frozen orange juice concentrate. If you do, omit the extra lemon juice and lemon zest.
    • lemon and lemon zest
    • cream cheese
    • sweetened condensed milk
    • heavy whipping cream-You can substitute with 8 ounce whipped topping.
    • salt

    frozen lemonade pie steps

    Steps

Follow these simple steps to make frozen lemonade pie.

    1. In a food processor, pulse ginger snaps until it resembles coarse sand. Mix in melted butter.
    2. Press ginger snap crumb mixture in a 9-inch deep-dish pie plate. Place in the freezer for 15 minutes.
    3. Meanwhile, beat cream cheese in a large bowl. Add frozen lemonade concentrate, sweetened condensed milk, salt, and juice from lemon. Beat until smooth.
    4. In a medium mixing bowl, beat heavy cream with electric mixer until it becomes whipped cream (about 2 minutes). Gently fold whipped cream into lemon filling mixture.
    5. Add pie filling to pie crust. Sprinkle with lemon zest. Freeze 4 or more hours until firm. Set out 10 minutes before serving.

    Cream Cheese Tip

If you set cream cheese out at room temperature to soften, the cream cheese will blend easier preventing lumps.

Should lemon icebox pie be frozen or refrigerated?

Most vintage recipes refrigerate the lemon icebox pies. However, after trying it that way, I found the pie slices to be runny, messy, and hard to slice.

Freezing the lemonade pie gives the lemon filling a firm ice cream texture. This is perfect for hot Southern summer days. Set it out a few minutes before serving to make it easier to slice. Cover leftovers and store in the freezer up to a week.
