Jalapeño, Cilantro, Lime Rice

Have you had Chipotle Cilantro Lime Rice? It is delicious. This is a spicy copycat version to make in your rice maker. This Jalapeño, Cilantro, Lime Rice is incredibly fresh and full of tasty flavor made with healthy brown rice.

  • 2 jalapeños
  • 4 garlic cloves
  • 2 cups cilantro remove leggy stems
  • 1 lime juiced
  • 1 tb olive oil
  • 1 chopped onion
  • 2 cups brown rice
  • 4 ½ cups chicken or vegetable broth
  • salt and pepper to taste


  • Combine jalapeños, garlic, cilantro, and lime juice in a food processor or blender.
  • Pulse until finely chopped.
  • Sauté chopped onion in olive oil until completely cooked and translucent.
  • Rinse off brown rice until water is clear.
  • Add rice, broth, onions, and cilantro mix to rice maker.
  • Cook according to the directions of the brown rice setting.
  • Salt and pepper to taste.


Note: You can substitute brown rice for white rice.
