Easy Mediterranean Beet Salad Recipe
Do you like beets? Then you will love this Mediterranean beet salad that is made with goat cheese, pecans, balsamic vinegar, & olive oil!
- 45 oz can beets drained or (3) 15 oz cans
- 1/2 red onion chopped
- 1/4 cup balsamic vinegar
- 1/2 cup roasted pecans
- 2 tbs olive oil
- 3 oz plain goat cheese
- 3 tbs fresh parsley chopped
- salt and pepper to taste
Mix 45 oz can beets, 1/2 chopped red onion, and 1/4 cup balsamic vinegar together.
Marinate 1 or more hours. (The longer the better flavor.)
Add 2 tbs olive oil and mix.
Top with 3 oz goat cheese, 1/2 cup roasted pecans, and 3 tbs chopped parsley.
*Cooking Note: If you do not like goat cheese, blue cheese is a fantastic substitution. It will be just as delicious with blue cheese as it would with goat cheese.
