  • 3 tomatoes
  • 3 cups corn fresh, grilled, or frozen
  • 1 small onion
  • 1/4 cup olive oil
  • 2 tbs white wine vinegar
  • 1/2 cup fresh basil
  • salt and pepper to taste


  • If using fresh corn, blanch the corn for 1 minute or grill the corn. If using frozen corn, thaw out corn, but do not heat it.
  • Chop tomatoes, basil, and onions.
  • Mix together the remaining ingredients. 
  • You can serve immediately, but it is best to refrigerate 1 hour or more for optimal flavoring and then serve.
