Ingredients

  • 2 lbs ground turkey
  • 4 oz can green chiles
  • 15.5 oz can black beans drained
  • 1 packet of taco seasoning mix
  • 1 cup salsa
  • 1 egg
  • 1/2 cup finely chopped onion
  • 1 cup oatmeal
  • 8 oz can enchilada sauce
  • 1 cup shredded cheddar cheese
  • fresh chopped tomatoes cilantro, and jalapeƱos for garnish

Instructions

  • Preheat oven to 375.
  • In a large mixing bowl, combine turkey, chiles, beans, taco seasoning, salsa, egg, onion, and oatmeal.
  • Form a large loaf and put in a 9x13 baking dish.
  • Bake 30 minutes uncovered.
  • Cover with enchilada sauce and cheese.
  • Bake for an additional 45 to 1 hour until fully cooked.
  • Allow to rest 10 minutes before slicing.
  • Top with chopped tomatoes, cilantro, and fresh jalapeƱos.
