Ingredients

  • 2 lb ground beef
  • 1 onion chopped
  • 28 oz can diced tomatoes
  • 1 cup chopped green beans
  • 1 cup chopped carrots
  • 1/2 cup chopped celery
  • 6 cups beef stock
  • 6 oz tomato paste
  • 1 bay leaf
  • 1 tb garlic
  • 1 tb parsley
  • salt and pepper to taste

Instructions

  • Brown ground beef, onions, and celery until completely cooked.
  • Add remaining ingredients.
  • Cook to a boil.
  • Lower temperature to a simmer and cook for two hours.

Notes

*Note: I like the carrots in my soup, but if you want to cut additional carbs, you can take those out. Also, radishes are great to add in if you want that potato taste that traditional hamburger soup recipes have!
