    Ingredients

    You will need the following ingredients to make tomato pie.

    • deep dish pie shell
    • tomatoes- I try to use whatever is fresh and pretty at the time. You can use any type of tomatoes.
    • basil
    • green onions-You can substitute with red onions, shallots, or Vidalia onions.
    • mozzarella
    • cheddar cheese
    • mayonnaise

    Note: This recipe is the traditional Southern tomato pie version. However for tasty variation, you can add in crumbled bacon.

    Steps to make tomato pie

    Follow these steps to make the perfect tomato pie.

    1. Slice tomatoes about ¼ inch thick. Then slice tomato slices in half. Spread on a paper towel and sprinkle the tomatoes liberally with salt to sweat out the extra liquid. Set out 30 minutes, then pat them dry.
    2. Bake deep dish pie crust at 350 degrees for 10 minutes. Remove from oven.
    3. Add sliced tomatoes, overlapping them to fit in the pie shell.
    4. Top tomato slices with chopped green onions and chopped basil.
    5. In a mixing bowl, mix mayonnaise, mozzarella, and cheddar cheese.
    6. Spread cheese mixture over the top of the pie.
    7. Add 5 sliced tomatoes on the top. (This is for a pretty presentation and is optional. You can skip this step if you do not want to add the sliced tomatoes on top.)
    8. Bake at 350 degrees for 40 to 45 minutes.

    Note: It is best to rest 20 to 30 minutes before serving. This allows the pie to set. You can serve it warm or at room temperature. You can also eat it cold.

    Tip: Fresh shredded cheese will melt better than the pre-shredded packaged cheese and add a richer flavor.

    How do you store leftovers?

    Store pie slice leftovers in an airtight container in the refrigerator up to 3 days.

    Pie slices can be reheated in the oven at 350 for 10 to 15 minutes.

    A whole pie can be covered in saran wrap or tinfoil and stored in the refrigerator up to 3 days.

    Reheat whole pie in the oven at 350 for 20 to 25 minutes.

    Do not try to freeze the pie. It will not freeze well.
