This recipe is made best in the summer months when the tomatoes are at their full glory in peak season. This simple tomato soup recipe really captures the full flavor of the tomatoes, so you want to use those lovely vine ripened tomatoes that are bursting with garden flavor. The winter tomatoes won’t taste the same and the recipe could taste very dull if you use the standard grocery store tomato. The creamy avocado soup pairs nicely with the tomato soup. The pickled cucumbers tie the layers of flavors together and compliments both soups beautifully.
*You want to use a two to one ratio; with using two portions tomato soup and one portion avocado soup to avoid overpowering the tomato soup flavors.
Tiered Tomato Soup Shooters Recipe
- 2 lbs vine ripened tomatoes
- 4 tbs white wine vinegar'
- 1 tsp red pepper flakes
- 3 tbs olive oil
- 2 ripe avocados
- ¼ cup sour cream
- ¾ cup chicken broth
- 3 tbs fresh lime juice
- 1 cucumber
- 3 tbs minced shallots
- salt and pepper to taste
- Cut tomatoes into chunks. Place in food processor. Add 2 tbs of vinegar and 3 tbs of olive oil. Add 1 tsp red pepper flakes. Blend in food processor until pureed. Set aside, cover, and chill for at least one hour.
- Pit and peel avocados. Place in food processor. Add sour cream, chicken broth, lime juice, and salt and pepper. Blend. Set aside and cover with plastic wrap. Chill for at least one hour.
- Peel cucumber. Cut cucumber in half length wise and scoop out all seeds. Finely dice. Dice shallots. In a small bowl, mix cucumber, shallots, and 2 tbs of vinegar. Salt and pepper. Cover and chill for at least one hour.
- To serve: Place one layer of avocado soup in a shooter glass or small serving glass. Gently pour tomato soup over avocado soup with a two tomato soup ratio to one avocado soup ratio. Top with cucumber mixture.
