This homemade balsamic vinaigrette dressing is fantastic over a salad or Italian pasta salads. This is not your particular balsamic and olive oil dressing. This particular dressing is a bit sweet, a bit tangy, and a bit creamy. The lovely rich texture makes it taste very gourmet. The best thing is it can be whipped up in 5 minutes with very little effort! You literally throw it in a blender or food processor and BAM, it is done! So why not make it?
Use this balsamic vinaigrette as a marinade on chicken or vegetables. I love using it as a marinade for eggplant, zucchini, onions, mushrooms, and red peppers, then grilling them as a side dish. It makes a lovely side dish with incredible flavor.

- 1/3 cup balsamic
- 3/4 cup olive oil
- 3 tbs mayonnaise
- 2 tbs honey
- 1 tbs Dijon Mustard
- 1/2 tsp salt
- 1/2 tsp ground pepper
- 1 garlic clove
Blend everything together in food processor or blender. Serve or refrigerate in airtight container.
