    This taco pie is also known as the legendary "Impossible Pie," because it is so easy, quick, tasty, and inexpensive to make.

    However, I added a few tweaks to the recipe make it even better.

    Ingredients

    You will need the following ingredients to make this Taco Pie recipe:

    • ground beef- You can substitute with ground chicken, ground pork, or ground turkey.
    • taco seasoning mix
    • canned green chiles with their liquid-Mild or hot based on your preference.
    • freshly shredded cheddar cheese-Substitute with Monterey Jack cheese if you want it spicier.
    • Bisquick
    • milk-I use whole milk, but low fat and skim milk will work for the recipe also.
    • eggs

    Note:

    Some pre-packages of meat will have more than 1 pound of meat. However, cooking more than one pound of meat in this recipe will mess up the finished pie shell result. I suggest only cooking 1 pound and saving the remaining meat for something else.

    Steps

    Follow these simple steps to make taco pie:

    1. Cook ground beef and onion. Mix in taco seasoning.
    2. Pour beef mixture in a greased pie dish.
    3. Top with green chile peppers with the liquid and 1 cup cheddar cheese.
    4. In a mixing bowl, mix Bisquick, eggs, and milk. Pour mixture over the cheese.
    5. Bake at 400 degrees for 25 minutes.
    6. Top with additional cup of cheese and bake 5 more minutes.
    7. Remove from oven and rest 5 minutes. Serve with your favorite toppings.

    Topping Suggestions

    This taco pie is delicious as is, however, you can add your favorite taco toppings.

    Some topping suggestions include: sour cream, lettuce, tomato, green onions, black olives, salsa, guacamole, taco sauce, red onion, and cilantro.

    Sides

    This taco pie is very filling but will go great with your favorite Mexican side dishes. Here are a few suggestions to compliment the dish:

    • baked tortilla chips
    • Mexican black beans
    • Mexican corn salad
    • jalapeno, cilantro, lime rice
    • refried beans

    Ingredients

    • 1 pound ground beef
    • ½ onion diced
    • 1 ounce taco seasoning
    • 4 ounce canned green chiles do not drain liquid
    • 2 cups cheddar cheese shredded
    • ¾ cup Bisquick
    • 1¼ cup milk
    • 2 eggs

    Instructions

    • Cook 1 pound ground beef and ½ diced onion. Drain any extra fat. Mix in 1 ounce taco seasoning.
    • Pour beef mixture in a greased pie dish.
    • Top with 4 ounce canned green chile peppers with the liquid and 1 cup cheddar cheese.
    • In a mixing bowl, mix ¾ cup Bisquick, 2 eggs, and 1¼ cup milk. Pour mixture over the cheese.
    • Bake at 400 degrees for 25 minutes.
    • Top pie with 1 cup of cheese and bake 5 more minutes.
    • Remove from oven and rest 5 minutes. Serve with your favorite toppings.

      When I came across this recipe I knew I had to try it. I hadn't had taco pie since I was a child. It did not disappoint. In fact, it was even better than I remembered. It's so easy too!!! Adding to our dinner rotation.
