    This Jalapeño, Cilantro, Lime Rice is incredibly fresh and full of tasty flavor made with healthy brown rice.

    This cilantro lime rice is naturally gluten-free. It is a great side dish for those on a gluten free diet!

    Note: In this recipe, I use brown rice to keep it healthy. However, you can substitute brown rice for white rice.

    If you use white rice, you would cook it the same way other than adjusting the time in your rice maker.

    How to make Cilantro Lime Rice

    • Combine jalapeños, garlic, cilantro, and lime juice in a food processor or blender.
    • Pulse until finely chopped.
    • Sauté chopped onion in olive oil until completely cooked and translucent.
    • Rinse off brown rice until water is clear.
    • Add rice, broth, onions, and cilantro mix to rice maker.
    • Cook according to the directions of the brown rice setting.
    • Salt and pepper to taste.

    How do you cook it on stove top?

    *This recipe is for a rice maker. If you do not have a rice maker, cook it according to the directions on your rice package for stovetop with the same ingredients.

    What if you do not want it spicy?

    If you do not want it spicy, you can omit the jalapeno. It will still have a delicious cilantro and lime flavor in your rice.

    Use vegetable broth if you want to make this lime rice a vegetarian dish. It will still offer an AMAZING flavor!

    Ingredients

    • 2 jalapeños

    • 1 lime juiced
    • 1 tb olive oil
    • 1 chopped onion
    • 2 cups brown rice
    • 4 ½ cups chicken or vegetable broth
    • salt and pepper to taste
