Stuffed peppers is one of my husband's favorite meals in the winter. He loves to order them at our little local diner restaurant called Zorba's when they have them on special.
Because he loves the stuffed peppers so much, I decided to make a soup version. This soup version has all the great flavors of the baked stuffed peppers with minimal work. Win... Win!
This hearty soup is perfect for a cold day or a busy weeknight. It can be made in under 30 minutes! Everything is easily cooked in the Instant Pot making clean up a breeze! I hope you enjoy! Xoxo.

How do you store leftovers?
To store leftovers, store in an air tight container up to 3 days in the refrigerator.
Can you freeze stuffed pepper soup?
You can freeze stuffed pepper soup, however, you will need to cook the rice separately. Freeze the soup in an air tight container. Defrost and reheat when ready to serve. Add rice to soup when reheating.
If you freeze the stuffed pepper soup with the rice in the soup, the rice may become mushy when you defrost and reheat the soup.

Cooking tip
I use the ChopStir Original Ground Meat Chopper, Frozen Juice Concentrate Stirrer, Heat-Resistant Nylon, Made in the USA, Black to chop and ground the meat into tiny pieces. It is a great tool to have on hand for any ground meat recipes and is super easy to use. You can see how it works in the cooking video.

I love stuffed cabbage and stuffed peppers, so when I seen this I just had to try it. This soup is wonderful, taste is great and will make this many more times, even my wife and Mother-In-Law loved it. Tks. for the great recipe. By the way I used instant rice and it was great.

I made this tonight. I like stuffed peppers but sometimes I don't feel like all the work, so when I saw this, I had to try it. It turned out great. It tastes just like my stuff peppers but not as dry, so I think this is my new favorite soup. Next time I will add a little more liquid since it is pretty thick.

I am following your recipe and have to know is the Zorba's you speak of in Highland Indiana?
Cat says
Very good. Used 1 pound ground beef and one pound ground veal, 3 peppers, 28 oz whole tomatoes. Will definitely make again!
Susan says
Just made this tonight and it was DELICIOUS! It has exactly the flavor I remember from my Mom’s stuffed peppers. I did get the dreaded “burn” message because I forgot about scraping the bottom of the pan after sautéing the meat, but by then, the soup was ready to eat anyway! One of my new favorites, thank you!
Rosa says
Can u make this stove top or slow cooker ?
Katie says
You can definitely make it on the stovetop. Cook same way in one pot. After adding rice, cook about 20-30 minutes covered, stirring occasionally, checking to see if the rice is fully cooked.
Annette says
This was absolutely amazing!! The taste is better with a little salt and I might add a little nore beef broth to it before I put it away. I like a little more broth to my soups.
Katie says
It is regular rice. Thank you! I hope you like it!
Gina says
I just got a pot and my rice was an epic failure. I want to try this, but does the rice cook in 4 minutes time?
Katie says
Sort of.... The Instant Pot will be set to stop cooking after 4 minutes, but you let it natural release for 10 minutes. So it is still steam cooking in the pot for those 10 minutes without the actual Instant Pot on... I hope this makes sense. Then you open the lid after 10 minutes and it should come out perfect. Therefore, you are actually cooking the rice a bit longer than 4 minutes.
Tracey says
This is a 5 Star soup!! The only thing I did differently was that I didn’t sauté the garlic and the onions, and it turned out great. Thank YOU!!
