    This is a five ingredient, easy, delicious Instant Pot Italian Beef Dinner Recipe. The tender meat pulls apart with a fork. The dry Spaghetti Sauce mix combined with the juices from the meat and veggies develops a delicious Italian flavor. (Don't worry it will not taste like spaghetti!)

    This Instant Pot Italian pot roast dinner is a five ingredient recipe.

    If you don't tell them how easy it is to cook, I won't either!

    What ingredients do you need?

    To make this pressure cooker Italian pot roast, you need the following ingredients:

    • beef chuck roast
    • small red potatoes
    • carrots
    • tomato sauce
    • McCormick thick and zesty spaghetti sauce mix

    How to make Instant Pot Italian pot roast

    Follow these simple steps to make Instant Pot Italian pot roast.

    • In a mixing bowl, mix tomato sauce, McCormick thick and zesty spaghetti sauce mix, and water. (photo 1)
    • In an Instant Pot, add beef chuck roast and pour sauce over it. (photo 2)
    • Layer quartered small red potatoes over the roast. (photo 3)
    • Layer peeled and quartered carrots over the potatoes. (photo 4)
    • Cook on meat/stew setting for 45 minutes.
    • Natural release before opening.

    Tip

    If you prefer a thicker gravy sauce, remove meat, potatoes, and carrots.

    Mix ¼ cup of sauce with 2 tsp cornstarch in small bowl. Mix in the mixture with the sauce in the Instant Pot. Cook on saute setting for 5 minutes to thicken. Rest 5 additional minutes.

    Why use chuck roast?

    Chuck roast has a larger amount of fat content than the other cuts of roast.

    The fat content gives additional flavor and tenderness.

    Look for meats labeled as: chuck roast, boneless chuck roast, chuck shoulder pot roast, 7 bone chuck pot roast, or beef chuck arm.

    Ingredients

    • 3 lb beef chuck roast
    • 3 lbs small red potatoes quartered
    • 3 cups carrots peeled and quartered
    • ¼ cup water
    • 15 oz can tomato sauce
    • 1 packet McCormick thick and zesty spaghetti sauce mix

    Instructions

    • Mix 15 oz tomato sauce and 1 packet of McCormick thick and zesty spaghetti sauce mix with ¼ cup water.
    • Pour over 3 lb chuck roast in Instant Pot.
    • Layer 3 lb quartered small red potatoes over the roast.
    • Layer 3 cups peeled and quartered carrots over the potatoes.
    • Cook on meat/stew setting for 45 minutes.
    • After 45 minutes, allow steam to naturally release before opening.

    For thicker gravy sauce:
    Mix ¼ cup of sauce with 2 tsp cornstarch in small bowl. Mix in the mixture with the sauce in the Instant Pot. Cook on saute setting for 5 minutes to thicken. Rest 5 additional minutes.

      To pressure cook vegetables and not have them turn-into mush, you can wrap them up in foil and place them on top. However, you'll lose the flavors of the veggies mixing with the other ingredients. You also could add them ten minutes into the beef cooking.

      The pot roast was absolutely delicious! Thank you for a great recipe. The potatoes and carrots were a little more done than we like, so next time I will cut potatoes in half and leave carrots whole. Maybe they continued to cook a little more because I had it on keep warm for 2 hrs after cooking? I am new to Instant Pot and this was my first recipe! What a great start! Thanks so much!

      This looks ridiculously yummy! I've got to try it soon in my IP and I'm going to look for that McCormick sauce packet this week at the store. Girl, you know it looks and sounds fantastic if I'm buying a spice packet! lol!
