Mediterranean Beet Salad with Goat Cheese
Do you like beets? Then you will love the combinations of this Mediterranean beet salad. The beets are marinated in balsamic vinegar; then tossed with olive oil, parsley, roasted pecans, goat cheese, salt, and pepper. The result is PERFECTION!
I threw my Best Friend a small surprise birthday dinner. Whenever I entertain, I try to do several easy dishes mixed in with just a few complicated dishes. I don’t want to become overwhelmed or too exhausted to enjoy my guests. I have had to learn this from experience. When I was younger, I would cook for days for a dinner party and be too worn out to socialize. For this particular birthday dinner, I created a Mediterranean themed menu that included this delicious beet salad.
I Hated Beets!
As a child I hated beets. My mother would force feed me them because she swore they were good for me. (I grew up in the day when you cleaned your plate at the dinner table no matter what it was. My mom would say, “People were starving in other countries…..” For this reason, I was not allowed to let good food go to waste. Anyone else from that generation?) I thought I was being punished. To be fair, she never marinated them in balsamic vinegar……Or tossed them with goat cheese….
It took me years to fall in love with beets and I haven’t met very many people that like them as I do. Therefore, to be honest, I didn’t think this salad would be a big hit. I figured it made a pretty filler that I could eat the leftovers. I was wrong….
My friends loved this Mediterranean Beet Salad. Several of my friends asked for the recipe. Beets have grown to be popular! Or maybe because this recipe is just that good???? Therefore, I thought I would also share this recipe with you. It makes a pretty salad for entertaining. Enjoy!
Should you use canned beets or roasted beets for this Beet Salad Recipe?
Because you marinate the beets in a good balsamic in this recipe, I recommend using canned beets. The end result flavor of the beets will be the same as if you roasted it. Beets make such a a terrible mess when cooking from scratch. However, if you don’t mind the red stains all over your kitchen, you are welcome to cook fresh beets and follow the recipe from there. Here is a link on how to cook fresh beets. I generally roast beets if I were to eat them mixed with roasted vegetables or standing alone by themselves as a side. It would be worth more of your effort in this instance.
Health Benefits of Eating Beets
Beets are wonderfully healthy. They help fight inflammation in your body and detoxification. They are also a great energy source. They are rich in vitamin C & B, potassium, maganese, and fiber. They also carry anti-cancer properties. Therefore, they are a great root vegetable to incorporate in your diet. If you haven’t tried them in a salad, go for it. Marinating them in a good balsamic really makes them tasty. That is why they are so delicious in this Mediterranean beet salad! However, they do high glycemic index. Therefore if you are on a low-carb diet, they may not be a good choice for you.
*Cooking Note: If you do not like goat cheese, blue cheese is a fantastic substitution. It will be just as wonderfully tasty with blue cheese as it would with goat cheese.
