    Mediterranean Beet Salad
    Do you like beets? Then you will love this Mediterranean beet salad that is made with goat cheese, pecans, balsamic vinegar, & olive oil!

    Do you like beets? Then you will love the combinations of this Mediterranean beet salad. 

    The beets are marinated in balsamic vinegar; then tossed with olive oil, parsley, roasted pecans, goat cheese, salt, and pepper.

    The result is PERFECTION!

    Follow these EASY steps to make Mediterranean beet salad.

    1. Mix beets, red onion, and balsamic vinegar together.
    2. Marinate beet mixture 1 or more hours.
    3. Add olive oil and mix.
    4. Top with goat cheese, roasted pecans, and parsley.
    5. Salt and pepper to taste.

    Should you use canned beets or fresh beets ?

    Because you marinate the beets in a good balsamic in this recipe, I recommend using canned beets.

    The end result flavor of the beets will be the same flavor as if you roasted it. Beets make such a a terrible mess when cooking from scratch.

    However, if you don't mind the red stains all over your kitchen, you are welcome to cook fresh beets and follow the recipe from there. Here is a link on how to cook fresh beets. 

    I generally roast beets if I were to eat them mixed with roasted vegetables or standing alone by themselves as a side. It would be worth more of your effort in this instance.

    Health Benefits of Eating Beets

    Beets are wonderfully healthy. They help fight inflammation in your body and detoxification. They are also a great energy source.

    They are rich in vitamin C & B, potassium, maganese, and fiber. They also carry anti-cancer properties.

    Therefore, they are a great root vegetable to incorporate in your diet. If you haven't tried them in a salad, go for it.

    Marinating them in a good balsamic really makes them tasty. That is why they are so delicious in this Mediterranean beet salad!

    However, they do high glycemic index. Therefore if you are on a low-carb diet, they may not be a good choice for you.

    In this Mediterranean Beet Salad, the beets are marinated in balsamic vinegar; then tossed with olive oil, parsley, roasted pecans, goat cheese, salt, and pepper. The result is PERFECTION!

    *Cooking Note: If you do not like goat cheese, blue cheese is a fantastic substitution. It will be just as delicious with blue cheese as it would with goat cheese.

    Ingredients

    • 45 oz can beets drained or (3) 15 oz cans
    • ½ red onion chopped
    • ¼ cup balsamic vinegar
    • ½ cup roasted pecans
    • 2 tbs olive oil
    • 3 oz plain goat cheese
    • 3 tbs fresh parsley chopped
    • salt and pepper to taste

    Instructions

    • Mix 45 oz can beets, ½ chopped red onion, and ¼ cup balsamic vinegar together.
    • Marinate 1 or more hours. (The longer the better flavor.)
    • Add 2 tbs olive oil and mix.
    • Top with 3 oz goat cheese, ½ cup roasted pecans, and 3 tbs chopped parsley.

      I had a can of julienned beets and some fresh spinach that I needed to use and did a search for canned beet recipe and stumbled on this. I used a 15 oz can, but used 1/4 cup balsamic vinegar and 1/4 of a red onion. Let it sit overnight and put onto spinach for salad along with the goat cheese, chopped almonds (no pecans on hand). With a little salt and pepper, it was perfect! I think I'll be buying another can of beets to eat this again. Thank you for sharing.

      Made this to celebrate Beltane and it was delicious! Couldn't find flat parsley anywhere so I used leaves from my spearmint plant. Such a nice spring dish.
