The beets are marinated in balsamic vinegar; then tossed with olive oil, parsley, roasted pecans, goat cheese, salt, and pepper. The result is PERFECTION!
I threw my Best Friend a small surprise birthday dinner. Whenever I entertain, I try to do several easy dishes mixed in with just a few complicated dishes. I don’t want to become overwhelmed or too exhausted to enjoy my guests. I have had to learn this from experience. When I was younger, I would cook for days for a dinner party and be too worn out to socialize. For this particular birthday dinner, I created a Mediterranean themed menu that included this delicious beet salad.
As a child I hated beets. My mother would force feed me them because she swore they were good for me. (I grew up in the day when you cleaned your plate at the dinner table no matter what it was. My mom would say, “People were starving in other countries…..” For this reason, I was not allowed to let good food go to waste. Anyone else from that generation?) I thought I was being punished. To be fair, she never marinated them in balsamic vinegar……Or tossed them with goat cheese….
It took me years to fall in love with beets and I haven’t met very many people that like them as I do. Therefore, to be honest, I didn’t think this salad would be a big hit. I figured it made a pretty filler that I could eat the leftovers. I was wrong….
My friends loved this Mediterranean Beet Salad. Several of my friends asked for the recipe. Beets have grown to be popular! Or maybe because this recipe is just that good???? Therefore, I thought I would also share this recipe with you. It makes a pretty salad for entertaining. Enjoy!
*I use canned beets because the end result will taste the same and beets are such a mess to cook from scratch. However, if you don’t mind the red stains all over your kitchen, you are welcome to cook fresh beets and follow the recipe from there.
- 3 cans beets, drained
- ½ red onion, sliced and cut
- ¼ cup balsamic vinegar
- ½ cup roasted pecans
- 2 tbs olive oil
- 3 oz plain goat cheese
- 3 tbs fresh parsley, chopped
- salt and pepper to taste
- Mix beets, red onion, and balsamic vinegar together and marinate 1 or more hours. (The longer the better flavor.)
- Toss the beet mixture with the remaining ingredients. Serve.
