    Easy BLT Deviled Eggs Recipe

    This Easy BLT Deviled Eggs Recipe is wicked good. In fact, they will be the best deviled eggs you will ever make!

    They make a beautiful appetizer for a dinner and/or an "eggscellent" side dish for a cookout, barbecue, and family gathering.

    Watch out! These little deviled eggs disappear fast and people will beg for the recipe.

    BLT Deviled Eggs

    I love the classic BLT. I also love a good deviled egg. I have made Halloween Spider Deviled Eggs and Buffalo Deviled Eggs .  

    Both are very good. Cookouts are very popular this time of year, and I often make deviled eggs as one of my side dishes.

    I wanted to create something a bit different than my traditional recipes and I thought, "BACON!" Everything is better with bacon.

    And for a twist, why not BLT Deviled Eggs? Out came this creation.

    These are made with bacon, tomatoes, and arugula.

     I think the color combination is so vibrant and pretty, don't you?

    They make you want to eat with your eyes. I mean, let's face it.

    Usually deviled eggs are not the prettiest to look at.

    But these are fairly pretty. They look even a bit fancy....

    There is nothing boring about this deviled egg recipe version.

    Your friends and family will be impressed with the presentation. However at the end of the day, "TASTE" is most important.

    The bacon egg filling has a crunchy and soft texture. It is incredibly flavorful.

    The salty tomato topping with the peppery flavor of the arugula give the eggs the perfect finish. It is high and protein and low on carbs.

    I had them in a container in my refrigerator. My husband came home while I was running errands.

    He texted me, "These eggs are amazing." My husband likes my cooking most days, but rarely does he stop what he is doing to text me how great something is.

    He would just tell me when I got home. He confirmed with me that they were the best deviled eggs EVER!!!

    Ingredients

    • 12 eggs boiled
    • 4 slices bacon cooked and crumbled
    • ¾ cup mayonnaise
    • 1 teaspoon dijon mustard
    • 1 large tomato diced and salted to taste
    • ¼ cup finely chopped arugula

    Instructions

    • Cut eggs in half. Remove egg yolks. Place in a mixing bowl.
    • Add mayonnaise and mustard to egg yolks. Mix well. Add in crumbled bacon and mix.
    • Add yolks back into the eggs.
    • Top with the tomato and arugula.

      Holy moly! These look great Katie! I love the BLT concept and I'll make these Sunday and we can eat leftovers for breakfast all week. Can just imagine how good that arugula tastes with it too 🙂
