Zucchini Noodles with Speck Ham and White Wine Sauce is a colorful, flavorful meal without the guilt! It is gluten free and low carb, so you can eat as much as you want!
With all those beautiful vegetables ripening in the garden, this is the perfect time of year for zucchini noodles. Have you heard about zucchini noodles? You can read all about how to make them here. Who wants a heavy meal when it is 105 degrees outside? Not me! And going with the veggie theme, I added in some fresh asparagus and garden ripened tomatoes. The garlic, lemon, white wine sauce flavored the zucchini noodle combination perfectly.
A couple of months ago, I was approached from Speck Ham to try their product for free and give my honest opinion. I absolutely LOVED IT! If you are a serious foodie then you must try this ham!!! Speck Ham or Speck Alto Adige PGI is a distinctive little smoked ham is made in South Tyrol, located in the Northern part of Italy. It is similar in taste to a prosciutto or a pancetta with a more intense smokey flavor.
I loved it so much, I have been using it in several of my dishes. I added it to this dish to give the sweet and tart flavors of the lemony wine sauce a nice salty balance. If you can’t find Speck Ham, you can substitute it for Prosciutto instead.
And of course, you can’t for get the cheese!!! A good Parmesan was the perfect finish touch.
I mean look at this! You can eat with your eyes and not feel one ounce of guilt! You are welcome!

Zucchini Noodles with Speck Ham and White Wine Sauce

- 4 zucchinis- spiralized
- 1 cup chopped Speck Ham or Prosciutto
- 3 tb butter
- 3 garlic cloves
- 1 lemon, juiced
- 1/4 cup gluten free white wine
- 1 cup chopped asparagus
- 1 cup chopped tomatoes
- 3/4 cup parmesan cheese
- salt and pepper to taste
- Sauce spiralized zucchini noodles. Set aside to drain. You do not want to add them into the sauce until water free or it will dilute wine sauce.
- Sauté garlic and Speck Ham in butter for one minute in large sauté pan.
- Add lemon juice and white wine and cook to thicken for about 2 to 3 minutes.
- Cook asparagus in wine sauce.
- Add zucchini noodles and tomatoes. Mix and sauté for one minute to absorb sauce. Salt and pepper to taste.
- Mix in parmesan cheese and serve.
