I have recently started doing Cross Fit with my husband and daughter. It has been very strenuous and demanding on my body. I just wasn’t having the energy or the recovery that was necessary to keep participating in the workouts. But I was really enjoying the challenge for my fitness and the bonding I creating from the interaction with my family. While Cross Fit is much more intense than my normal work out routines, I was shocked at how much I was particularly struggling. My Cross Fit trainer suggested it was my diet. While every body is different, my coach suggested that my low-carb diet just wasn’t sufficient to this high intensity training. She suggested I add in brown rice and sweet potatoes on the days I work out. I have to say, I was shocked on how much the addition improved my energy and increased my performance.

Problem was, I hate brown rice. I LOVE the white, sweet, sticky rice, but it is not healthy… I would rather have no rice than the crunchy, earthy brown rice. So I decided to play with my food and create something I would like. Jalapeños, cilantro, lime, garlic…. surely that can make boring rice into something amazing, right?
I threw jalapeños, cilantro, lime juice, and garlic into my Cuisinart DFP-14BCNY 14-Cup Food Processor, Brushed Stainless Steel and pulsed it on high. (I love this food processor. It is the BEST EVER and I can’t live without it.) I sautéed chopped onions in olive oil. I rinsed my rice very good.
Then I added the brown rice with chicken broth, sautéed onions and my cilantro mix in my Panasonic SR-DE103 Fuzzy Logic 8 Pre-Program Rice Cooker. (This is a great rice cooker. It cooks rice perfectly and makes my life so much easier!) I cooked it according to directions.
The verdict? It was definitely a winner!!! Sometimes I even impress myself.

*This recipe is for a rice maker. I make all my rice in my rice maker. If you do not have a rice maker, cook it according to directions on rice package in your pot with the same ingredients.
*To keep this recipe Gluten Free, use a Gluten Free brown rice.
- 2 jalapeños
- 4 garlic cloves
- 2 firm cups of cilantro, remove leggy stems
- 1 lime, juiced
- 1 tb olive oil
- 1 chopped onion
- 2 cups brown rice
- 4 1/2 cups chicken or vegetable broth
- salt and pepper to taste
- Combine jalapeños, garlic, cilantro, and lime juice in a food processor or blender.
- Pulse until finely chopped.
- Sauté chopped onion in olive oil until completely cooked and translucent.
- Rinse off brown rice until water is clear.
- Add rice, broth, onions, and cilantro mix to rice maker.
- Cook according to the directions of the brown rice setting.
- Salt and pepper to taste.
