“Create healthy habits, not restrictions.” I love the high calorie, high fat, naughty foods, but on a daily basis I eat very healthy. I try to stick with low-carb or healthy carbs, no sugar, non-processed healthy diet for my day to day. The key to staying on track is finding healthy meals that I love. One way I do this is switching out pasta with zoodles. What, you ask? That is right, zoodles. Zoodles are zucchini spiraled into the form of noodles out of one of my favorite gadgets in my kitchen, the Paderno World Cuisine Spiralizer Pro, 4-Blade.
Think about how much healthier it is to substitute a vegetable in place of pasta. Think of the calories and carbohydrates you save. Think about the extra vitamins you add to you your meal. Think about how energized you will feel with the veggies instead of sluggish with the pasta!
To cook the zoodles, I either roast them in the oven at 350 with a small spray of olive oil, salt and pepper. Or I sauté them on the stove top with a little salt and pepper until al dente. Drain any excess liquid from pan. Easy peasy! You can do it! Your heart and waist line will thank you for it!
Some people eat them raw. I prefer mine cooked to get a more similiar texture and taste to pasta noodles.
Next you just top them with your favorite pasta sauce and you have a healthier, low carb, but incredible tasty dish. I do it all the time.
*Cooking tip: I have found that if you cook the zoodles in your sauce, the sauce becomes runny. It is better to cook the sauce and zoodles separate.

- 2 zucchini
- 1 tsp olive oil
- salt and pepper to taste
- Cut off both ends of zucchini.
- Pick desired blade thickness of zoodles for your Paderno Spiralizer and set up your spiralizer.
- Attach zucchini to Paderno Spiralizer and spiralize your zucchini.
- Add olive oil and zoodles to a non-stick frying pan and pan fry at medium heat.
- Salt and pepper to taste.
- Once cooked to desired doneness, set for one minute to allow any excess liquid to sweat out.
- Drain any excess liquid.
- Top with your favorite sauce.
